Baking is one of my favorite things!  It reminds me of spending time in the kitchen with my mamaw; an amazing cook.  My mom on the other hand did not inherit any of mamaw’s cooking skills;  however, she most definitely has a sweet tooth.  My mom was diagnosed with dementia two years ago and she is rapidly declining.  At times, she doesn’t remember her favorites foods, however, she never forgets she loves my baking.  

This week’s treat was Coconut Pound Cake.  I used this Mini Bundt Bites Pan by Nordic Ware. 

This cake was fabulous!  Tropical Coconut party in your mouth.  

 I hope you’ll take the time this week to bake a sweet treat with someone you love or at least buy one and  share it.  Memories are made in the small things of everyday life!
